I know I promised a post of our DIY, budget friendly wedding; but
it is taking longer than I thought it would to get that all together...so in
the meantime I will post about all the wonderful things I am doing on my snow
days. My husband, Joe, and I are on snow day number 4 tomorrow. While he has
been out doing chores, making sure the cattle are fed, and bringing in fire
wood I have been busy inside baking, cooking, and completing crafts (I am
limited on this because I don't really have a lot of crafting supplies lying

As a surprise for Joe I made Chocolate Covered Rice Krispie Peanut
Butter Balls. I usually only make these for Christmas but seeing how snow days
are a special occasion I thought I would surprise him. I have made these for
the past two Christmas'. I always knew they existed I had just never made them
before so I searched for a recipe on Pinterest and found a great, simple, easy
recipe to follow at the blog Homemaking Fun. She also has the recipe for Oreo Balls, another
of my favorite Christmas treats to make! Check it out! I do not have pictures of the step by step
process, but I don't really think this is necessary. These treats are pretty
easy to make.
CHOCOLATE COVERED RICE KRISPIE PEANUT BUTTER
BALLS
2 cups creamy peanut butter
2 cups powdered sugar
4 Tbs. butter
4 cups rice krispies
Mix everything together and roll into balls and place on wax paper. Chill for 15-20 minutes.
While peanut butter mixture is chilling melt chocolate.
*23 oz. bag of milk chocolate chips melted with 4 Tbsp. vegetable shortening or chocolate melting chips. If using chocolate chips then you will need place the balls in the fridge to set up. If using chocolate candy coating then they should set up at room temp.
**Cover balls with chocolate. ***Makes approximately 4 dozen.

* I just use chocolate almond bark and I don’t use any
shortening. I don’t have any problems doing it that way.
** Add sprinkles if you wish. I chose Valentine’s Day colors
since that is the next holiday!
*** I can usually only get about 3 dozen when I make mine…but I
have Rice Krispie balls of all different sizes because I am too impatient to
make them perfect, same size balls. I know that Joe is going to eat them in
approximately one sitting so there is no point to care how they look (although
sprinkles are an easy addition that makes them look pretty).
